Rhubarb Recipes?

Jesse was so excited to pick me some ruby (rhubarb) today. I had to make a pie crust for our chicken pot pie so I decided I might as well make a rhubarb pie! Every year I waste so much of the stuff...and this year I am determined to use more of it! Does anyone have any good recipes for rhubarb? :)

I found this in Country Woman Magazine many years ago. It came from Mary Kay Morris, Cokato, Minnesota. She said in the magazine, “This is one of the many ways I use the rhubarb that grows abundantly here. I know people like this recipe, because I've been asked many times for it.”

I can believe it. My parents and I always looked forward to spring rhubarb and a batch or two of these. Now it is just I who makes at least one batch each spring...

Nutty Rhubarb Muffins

¾ Cup packed brown sugar
½ Cup buttermilk or sour milk*
1/3 Cup veg. Oil
1 egg beaten
1 teaspoon vanilla extract
2 Cups all-purpose flour
½ teaspoon baking soda1/2 teaspoon salt
1 Cup diced rhubarb
½ Cup chopped nuts**

Topping:
¼ Cup packed brown sugar
¼ chopped nuts
½ teaspoon cinnamon

In a small mixing bowl, combine brown sugar, buttermilk, oil egg and vanilla; Mix well
Set Aside

In a medium mixing bowl combine flour, baking soda and salt. Add egg mixture; stir just until combined.

Spoon the batter into 12 greased muffin cups.
Mix together topping ingredients; sprinkle over tops of muffins.

Bake at 375 degrees for 20 minutes or until muffins test done.


*(I put about ½ Tsp. of apple cider vinegar into glass then add milk to make the ½ cup)

** She doesn't tell, in the recipe, when to add these. I put them in with the rhubarb. Also. I add the cinnamon with the dry ingredients and don't use the topping . They are great either way.

Oh my goodness that looks DELICIOUS!!! Dee (my mother in law) grows Rhubarb and makes a lot of things with it. I love the strawberry rhubarb pie! but she makes other really good things with it too. I will get some recipes for you!
